Perfect evening. Outside, the fog settles in a gentle mist on the dark mountains; KittyKitty is happy to be inside. A quick, easy dinner is on the menu: baked Panko-crusted chicken thighs enlivened with BeaZell's new Cajun spice, and spinach-and-cheese-filled ravioli topped with a freshly made Romanesco sauce.

We enjoy roasted red peppers in many ways, whenever possible. Tonight, a jar of roasted peppers, some olive oil, onion, garlic, basil and parsley and a little grated Parmesan come together for a simple but topping for the ravioli. The wine? A simple but excellent pairing with the sauce: Periquita, from Portugal. We discovered this food-friendly red wine during our years in Connecticut, and drank it often and with a variety of foods.

And, as if Sirius Classic Rock knew I was listening, dinner was accompanied by Gordon Lightfoot, Cat Stevens, Carol King and YES......Don McLean, singing Vincent! Truly a perfect evening.
