Busy Day - Quick Dinner

Simple dinner tonight: the Copper River Salmon with our special Panko and Beazell's topping with sauteed baby summer squash and a small amount of mashed potatoes. After the wine, a Wente Pinot Noir from Livermore CA, we had a salad of mixed greens with EVOO and white balsamic vinegar, topped with my own pickled beets, Roquefort cheese and toasted walnuts. Simple but good. After a day made up of proof reading, shopping in Wenatchee, weed digging and pot planting, we were too tired to take a picture. And no, I did not plant pot...I planted in pots on my deck. The winds lately have been ruinous to earlier plantings.

Wine note: we had planned to have a Faire le Pont Pinot Noir with dinner, as we had Crayelle with this dinner last week, but....our Pinot supply is very low, so we had to go outside Washington for tonight's wine.
