Copper River Salmon Is Back in Town

It's back! Copper River salmon season has begun and this prized fish is beginning to come into the local markets.

Today in Costco I ran into David Toal of Ravenous Catering. Yes, I ran into him. I turned a corner and bumped into him with my cart. We began to talk, as we have known one another for quite awhile and I am a fan of his and Valarie's catering services. They know how to pair wines with their excellent foods, which is important to me. During the conversation he mentioned the salmon, which I had not yet discovered there that day, so after we went our separate ways I looked for the salmon.

There it was - fresh, glistening, vibrantly salmon-colored (naturally!) Copper River Salmon! And though I am a careful shopper, I felt the $12.99  price was very good for this time of year, so...tonight we dined on fresh Copper River salmon, prepared very simply with my own specially seasoned Panko topping. Delicate, silky, punctuated by the crispness of the Panko and accented with a light touch of fresh garlic, a little Pecorino Romano and a whisper of Beazell's seasoning: it was the best salmon I have ever had. Of course we complemented it with a very good local Pinot Noir from Crayelle Cellars. A light, delicate wine, it was the perfect accompaniment.
