Summer fruit freezing: An interview with Margaret Viebrock

I recently sat down with Margaret Viebrock, food safety and preservation specialist with the Washington State University Extension, to chat about how to best use our freezers for preserving the usually abundant harvest.

Rob Merrill: I love using the peaches, nectarines, and berries I grow to make smoothies and other cool snacks with fruit throughout the year. I have found that freezing is a good way to do that. Above all, I want to make sure I preserve them properly to be safe and to preserve the best fruit quality possible. What tips can you give to help with this?
