Did Abraham Lincoln Like Chocolate?

Our mother made this chocolate roll every year to celebrate Lincoln's birthday. This was back before Lincoln and Washington lost their individual identities and their birthdays became part of Presidents' Day weekend. I continued the tradition for years, sometimes making it for Washington's birthday, for with the addition of a few cherries it was appropriate for "he who chopped down the cherry tree." Or so legend goes.
Chocolate Roll
Bake at 350 for 25 minutes.
4 eggs
3/4 cup sugar
1/2 tsp. vanilla
1/4 c.cocoa powder
1/4 tsp. baking powder
1/4 tsp. salt
Beat eggs in medium size bowl; beat in sugar gradually until mixture is pale and thick; stir in vanilla.
Stir dry ingredients together and fold into egg and sugar mixture. Pour into greased and waxed paper lined jelly roll pan 15x10x1"
Bake @ 350 for 25 min., or until top springs back when lightly pressed. Turn cake out onto a clean kitchen towel sprinkled with more sugar; peel off paper. Gently roll up cake, wrap in the towel, cool.
Whip two cups heavy cream with 1/4 cup sifted powdered sugar and 1 tsp. vanilla. (be sure the only ingredient on the cream carton is "cream.") Here you can be creative and substitute a different flavoring or rum, brandy, creme de menthe, etc.
Unroll the cake carefully and spread with half the cream mixture. Roll it up again and frost with remaining cream. Arrange chocolate shavings on cream, to represent the bark of the log. Chill one hour or until serving time. Slice crosswise into servings, about an inch each. A little chocolate sauce, or a raspberry or cherry sauce drizzled over it doesn't hurt a thing.
Serve with a favorite ice wine, other dessert wine, or liqueur.
