Veggie dearth

It's almost March. That means I'm to that antsy point in the year where I'm practically squirming over the lack of good vegetables. Yeah, there are veggies in the produce sections of grocery stores, but my brain thinks seaasonally. I have a hard time this time of year coming up with fresh-flavored meals. Most of what I end up eating has been cooked.
I know I'm not the only one with this dilemma. I have a feeling, though, that some of you have conquered it. So, I ask you, what do you do to freshen up your late winter meals? Where do you find your inspiration?

Good question. We tend to eat lots of greens -- lettuce, spinach, kale, collard and mustard greens. We follow Italian chef Viana La Place's advice to cook greens in water spiced with garlic cloves, salt and red pepper flakes. Eat the greens; drink the juice. (Her book "Verdura" is fantastic.) Jazzing up salads with orange slices and cashews is always good, too. Also olives, when you can find good ones. Some people find frozen veggies repugnant, but I'm not one of those. Flash-cooked frozen peas work in all sorts of dishes. And frozen blueberries, never cheap, are a tasty treat, even if they only have half the flavor of fresh.

Ooh, Mike, those are great ideas. I just cooked up a little kale this evening to go with some macaroni and cheese. I used a bit of clarified butter to saute them, but I'll have to try your method next time. I also opened up a jar of peaches from last summer. I'm glad I spent the time canning those. That orange slice idea is one I'm planning to use with a spinach salad with bleu cheese. Thanks!

Last year we planted a "salsa garden" hot peppers, tomatoes, green onions and ate like pigs. If I could only grow chips I would have been set!

Veggie dearth
We have a green salad every night after dinner--after the wine is gone, although Riesling is ok with the one with oranges. We prefer arugula, but store-bought never equals home grown. 1) greens with roasted almond oil, T.Joe's orange muscat vinegar, orange segments, toasted almonds 2) greens with toasted walnut oil, balsamic or T.J.'s orange vinegar, beet salad, toasted walnuts and blue cheese 3) greens with same dressing, fresh pear slices, walnuts, blue cheese. We seem to be fixated on these beets this winter.
