My quick dinner: Tuna and rice.

As a kid, one my favorite sandwich was tuna (hold the pickles.) Admittedly, I was a big fan of the mayonnaise included in the tuna sandwich, but slowly learned to use a little less or even substitute yogurt for some of the mayo. Recently, though, my go-to food for an easy and satisfying lunch or dinner is Lazy Spicy Tuna Rolls. You might call it a more adult take on the tuna sandwich.

Last night, inspired by laziness, I made spicy tuna rolls for dinner. Unlike most rolls, these are done my super-lazy way. I take those lovely little strips of dried seaweed I stock up on while in Seattle and deftly wrap them around my choice of filling using chopsticks. It takes a bit of practice and knowledge of how to use chopsticks but once you have it down, oh man, it's awesome. You don't have to worry about bamboo mats and cutting rolls or making it look pretty.

Step 1: Place seaweed on desired filling.

Step 2: Put chopsticks near edges of seaweed.

Step 3: Put pressure on seaweed with chopsticks.

Step 4: Squeeze chopsticks together and pull up from filling.

Spicy Tuna Filling
1 can or pouch of tuna
1/3 cup mayonnaise or yogurt
1-2 teaspoons Sriracha hot sauce
About 1/2 cup cooked rice, or more to taste, (optional, I used brown rice)
Mix all ingredients together. Adjust spice with more Sriracha.

Everything sounds good but the seaweed. Maybe I could try tortillas? I like the inclusion of the Sriracha sauce. That's pretty tasty stuff with a definite kick. Mom
