Leftover plans?

Yep, we cooked the corned beef yesterday. It was good, salty and flavorful. My husband, Brian, and I invited my parents over for the feast, a move we all agreed was a good one. The brisket was still quite large and we had about half leftover after dinner. My plan is to make corned beef hash with the colcannon leftovers and a portion of the meat and top it off with a nice fried egg.
Even after the hash, I anticipate we'll have enough left over to make these Grilled Corned Beef and Fontina sandwiches. The image of the sandwiches (made of leftovers!) first inspired me to brine my own brisket for corned beef. I really can't see how anyone (any meat-eater, at least) could resist eating one of these sandwiches if presented with the opportunity. (Admittedly, my leftovers don't look so pretty, because I don't use the color-preservative in my brine and thus get grayish-brown meat. But the flavor is still fantastic.)
So, I plan to make hash and sandwiches, which should use up the leftover corned beef. How about you? What are your plans for your leftovers?
