On the food processor

Someone once asked me what my favorite appliance was. There was little hesitation before I responded, "My food processor." It slices, it dices — OK, it doesn't dice, but it does shred. And, as the name suggests, it processes. Best of all, it makes an easy task of chores that used to be, well, chores. With my food processor, which my husband gave me before we were married (so romantic, isn't it?), I use half the oil I used to use in hummus. A blender just doesn't cut it for making smooth dips.

I took a ski day yesterday and when I got home was sore, tired and hungry. I wanted to make something from scratch, nothing too time-consuming nor too difficult. The choice to use my food processor was an easy one.

Earlier this week, my brother Scott asked me if I had made some feta dip he had told me about. I hadn't, so I bought a tub of feta with the dip in mind. Remembering our earlier conversation, I figured the feta dip was a good fit for my energy level. As is customary, I tinkered with his suggestion a bit and added green onions and a few more herbs than he did. And it was good. Very good. Good enough to share.

Scott's Feta Dip

2 cloves minced garlic
1 cup crumbled feta cheese
1 cup low-fat Greek yogurt or strained yogurt
1/2 cup sour cream
About 1-2 teaspoons Greek herbs such as oregano, marjoram, thyme and dill
Small handful parsley
3 chopped green onions
Put all ingredients in food processor and process until smooth-ish. (There will be lumps from the cheese, which is fine.)
