Leftovers aren't always blah

If you have enough gravy, leftover mashed potatoes from a big family dinner won't last long — at least they didn't when my sister and I were little kids. Nowadays, I rarely pig out on mashed potatoes and gravy. Instead, I try to make new stuff from old.
Case in point, last night's potato croquettes. We had a good-size bowl of mashed potatoes leftover from a roast beef dinner the other night. We also had leftover bread crumbs from something else. And a shallot. With these three things — and plenty of eggs — we were on our way to fried potato goodness (or badness, depending on how you see fried food.)
And oh how the croquettes worked! They were delicious. I put together a few ramekins of sauces: ketchup, of course; ranch dressing, because who doesn't like it?; homemade honey mustard, it's my new favorite sauce; and the leftover gravy, can we say poutine anyone?
Leftover mashed potato croquettes
1 tablespoon butter
1 shallot (or 1/2 onion) finely diced
1/2 teaspoon Old Bay seasoning
4 cups mashed potatoes
1 cup cheese (cheddar, mozzarella, Parmesan, or whatever you like)
3 large eggs, divided
1 1/2 cups bread crumbs
1/4 cup oil for frying
Heat butter in a large saute pan over medium heat. Add shallot and Old Bay and cook until shallots are soft. Set aside.
Combine potatoes, cheese and 2 eggs and stir until thoroughly mixed. Add shallot mixture and stir thoroughly. Beat remaining egg and pour in shallow bowl. Put bread crumbs in another shallow bowl. Shape potato mixture into 1-inch balls. Flatten a bit and dip in beaten egg and then bread crumbs, making sure to coat all sides, and place on baking sheet. Continue with remaining potato mixture.
Heat saute pan over medium heat and add oil. Fry croquettes, in batches, until browned, for about 3 minutes each side.
Drain on a wire rack. Serve warm.

Sounds delicious, Rochelle. How come I never get in on these types of leftovers???
